
Beef Sales
We are pleased to announce our first Black Angus steer has been processed, packed and frozen and is now ready for delivery!
The steer was 27 months with a carcass weight 482.5 kgs. The carcass was dry aged for 14 days prior
to cutting. With a 15mm fat cover and marble score of 6/+, the carcass is exceptional. Our butcher has described it as the equivalent to the “Black Onyx” premium brand.

We have available meat packs that divide the carcass on a natural fall basis. We have also separated a few cuts to sell as specialty items as they are not easily divisible.
Availability is limited. Orders will be processed on a first come basis. Choices may become limited.
Premium Beef Pack $355
Your Premium Beef Pack contains your choice of Premium Steaks plus your choice of either a Grill Pack or Slow Cook Pack.
Each Premium Beef Pack will contain 12.5 to 13.5 kgs of meat depending on your selection.
Choose your Premium Steak cut:
1. Scotch fillet and rump steak.
a. Scotch fillet 2 x 430-gram pieces and
b. Rump steak 1 x 1.1 kg tray
OR
2. Porterhouse.
6 x 360 -gram pieces (2 steaks per tray)
Choose between a Grill Pack or a Slow Cook Pack to add to your Premium Steak selection:
Grill Pack, comprising:
a. Oyster blade steak, 1 tray of approx. 850 grams
b. BBQ steak, 3 trays of approx. 650 grams each
c. Schnitzel (not crumbed) 1 tray of approx. 550 grams
d. Sausage or mince. 8 trays of approx. 1 kg (your choice of mix)
OR
Slow Cook Pack, comprising:
a. Beef strips, 1 tray of approx. 1 kg
b. Chuck steak pieces, 1 tray of approx. 1.2 kg
c. Chuck roast, 1 piece of approx. 2.3 kg
d. Sausage or mince, 6 trays of approx. 1 kgs (your choice of mix)
Mince and Premium Sausage
Additional mince or sausage trays can be purchased for $20 per kg/tray.

Sausages are hand crafted, pure beef, gluten free & in 100% natural casings.

Tenderloin Steak
2 trays of tenderloin steak approx. 1.2 kgs per tray at $60 per kg
Beef Rump Cap Picanho
2 pieces of 1.8 to 2.3 kgs at $50/kg
Beef Brisket
1 beef brisket at 4.8 kgs $150

Beef Ribs
2 slabs of ribs containing 3 Ribs each, approx. 2.2 to 2.3 kgs per pack at $100 each.
